‘Special’

Recipe

Ingredients

2 Litres of Apple Juice.

1 Litre of White Grape Juice.

570 Grams of Sugar.

1 Teaspoon of Pectolase.

1 Teaspoon of Yeast Nutrient.

Wine Yeast (Gervin No:5 or A if possible).

Bentonite (Optional).

Method :

Dissolve the sugar in warm water. (If using Bentonite mix this with the sugar before adding the water).

Add all the ingredients to the demi-john.

Top up with water to the shoulder of the demijohn.

When the initial ferment has died down, top up with water.

Ferment to dryness.

NOTE :
Select an entry from amongst your club members (possibly as a result of an ‘in-club’ competition) or tasting - the winning wine should then represent your club in Class 23 : EWF Special Recipe Class in the 2009 EWF Show (25th April 2009).
This wine may also be considered suitable for entry into Cl 5 : Fruit White Dry and Class 14 : Table White Dry and also Class 37 : White Dry. Everybody making this wine may also enter it into the EWF Tri-Comp Wine Class (24th Oct 2009).
